Recipe Story
origins & traditionsArroz Doce is a beloved Brazilian rice pudding that epitomizes comfort food in Brazilian households. This traditional dessert transforms simple white rice into a luscious, creamy delicacy by slowly cooking it with whole milk, condensed milk, and aromatic spices. The addition of cinnamon sticks during cooking infuses the pudding with warm, sweet notes, while a dusting of ground cinnamon on top adds visual appeal and extra flavor. Cloves provide subtle depth and complexity. What makes this version special is the careful balance between the natural sweetness of condensed milk and the fragrant spices, creating a dessert that is rich without being overwhelming. The slow cooking process allows the rice to release its starches, creating a naturally thick and creamy consistency that coats your spoon perfectly. Served either warm or chilled, Arroz Doce is versatile enough for any occasion, from casual family dinners to festive celebrations.

Bring the mixture to a gentle simmer over medium heat, stirring frequently to prevent sticking.
Reduce heat to low and continue cooking for 15 minutes, stirring every 2-3 minutes until the mixture thickens.

Remove from heat and discard the cinnamon sticks and cloves.

Chef Tips
expert adviceStorage & Reheating
keeping it freshStore in an airtight container in the refrigerator for up to 5 days. The arroz doce will thicken as it cools, which is normal. Cover the surface directly with plastic wrap to prevent a skin from forming. Individual portions in ramekins can be covered with plastic wrap or lids.
Best enjoyed cold or at room temperature. If you prefer it warm, reheat gently in a saucepan over low heat, stirring frequently and adding a splash of milk to restore creaminess. Microwave reheating is possible but less ideal - use 30-second intervals at 50% power, stirring between each interval.
