Instructions
step by stepPreheat your oven to 375°F (190°C). Slice the bread into 1/2-inch thick pieces, approximately 12-15 slices. Arrange the bread slices on a baking sheet and brush each slice lightly with olive oil on both sides.
Toast the bread in the preheated oven for 10-12 minutes, flipping halfway through, until golden brown and crispy. Remove from oven and set aside to cool slightly.
While the bread is toasting, drain and rinse the white beans thoroughly. In a medium mixing bowl, gently mash about half of the beans with a fork, leaving the rest whole for texture.
Dice the tomatoes into small cubes, removing excess seeds if desired. Mince the garlic cloves finely. Chop the fresh basil and parsley.
In the bowl with the beans, add the diced tomatoes, minced garlic, chopped basil, chopped parsley, 3 tablespoons of olive oil, and balsamic vinegar. Season with salt and black pepper to taste. Mix gently to combine all ingredients.
Let the bean and tomato mixture sit for 5-10 minutes to allow the flavors to meld together.
Just before serving, spoon the bean and tomato mixture generously onto each toasted bread slice. Drizzle with a little extra olive oil if desired.
Arrange the crostini on a serving platter and garnish with additional fresh basil leaves. Serve immediately while the bread is still crispy.
