step by stepIn a large mixing bowl, combine ground pork with minced garlic, fish sauce, sugar, black pepper, and a small amount of vegetable oil. Mix thoroughly in one direction for 5-7 minutes until the mixture becomes sticky and cohesive.
Add finely chopped onions to the pork mixture and continue mixing for another 2 minutes until well incorporated.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld and meat to firm up.
Soak wooden skewers in water for 20 minutes to prevent burning during grilling.
Wet your hands with water and take about 2-3 tablespoons of the pork mixture. Shape it into an elongated oval and press it firmly onto a skewer, creating a sausage-like shape about 4 inches long. Repeat with remaining mixture.
Preheat your grill to medium-high heat and lightly oil the grates.
Place skewers on the grill and cook for 6-7 minutes on the first side until nicely charred.
Flip the skewers carefully and grill for another 6-7 minutes until fully cooked through and caramelized on all sides. The internal temperature should reach 160°F.
Remove from grill and let rest for 2 minutes.
Serve hot with lettuce leaves, fresh herbs (cilantro and basil), cucumber slices, and dipping sauce on the side.
